Bouquet: Layers of dense black plum, chocolate, violet perfume and a scratch of black pepper all coated in sea-salt caramel
Palate: Power and elegance. Soft and velvety textured, perfectly tuned for a serious but effortless display. Sweet black fruit flavours tumble over each on the on the long, long finish with a whisper of oak to tease it along, drifting off with fresh blueberry/blackberry notes.
Vineyard & Vintage Comments: A warm spring after a wet winter that replenished soil moisture led to an early budburst, which unfortunately was vulnerable to frost which reduced yields. A warm, mainly dry summer with cool nights allowed perfect ripening conditions, developing flavour intensity, acid balance, and tannin ripeness together. These parcels were fermented with an inoculated yeast for a moderately cool ferment on skins of 8 - 14 days. Maturation in new to 4 year old French oak after early rackings brought the barrel-selected blend to bottling in early 2012.
